Rice (cooked) | 200g |
Prawns (peeled and deveined) | 6 pieces |
Pineapple chunks | 50g |
Oyster Sauce | 1 Tbsp |
Fish sauce | 1 Tbsp |
Carrot (diced) | 1 piece |
Shallot (minced) | ½ piece |
Garlic (minced) | 1 clove |
Spring onions (chopped) | 1 piece |
Cashew nuts | 1 sachet |
Dried raisin | 1 sachet |
Coriander leaves (chopped) | 1 bunch |
Stir-fry the garlic
Heat oil in a pan over medium heat, then when the oil is hot enough add the minced garlic. Stir and cook the garlic until it turns golden brown in colour.
Stir-fry the prawns
Next, add prawns and then stir occasionally until nearly cooked. Add the diced carrot and minced shallot. Keep stirring until the carrot is cooked through.
Complete your fried rice
Add cooked rice, a pinch of salt, the sugar, a pinch of white pepper, the fish sauce, the oyster sauce and pineapple chunks. Then finally, add the spring onions and stir until all ingredients are well mixed (about 2-3 minutes).
Plate your dish
Dish your fried rice from the pan and top with fried cashew nuts and dried raisins. Garnish with a handful of coriander and serve with lime wedges.
