Egg Noodles | 100g (2 nests) |
Oyster Sauce | 3 Tbsp |
Light Soy sauce | 1 Tbsp |
Fish Sauce | 1 Tbsp |
Coconut Sugar | 1 Tbsp |
Chicken breast | 200g |
Garlic Cloves | 2 pieces |
Chinese Broccoli | 100g |
Egg | 1 |
COOK THE EGG NOODLES
Boil the egg noodles for about 7 minutes until they’re soft.
Drain the noodles and then rinse them thoroughly with cold water, this will prevent them from cooking further and becoming too soft to use. Set aside.
PREPARE THE SEASONING SAUCE
In a glass jar combine oyster sauce, soy sauce, fish sauce and coconut sugar.
Mix well and set aside.
STIR FRY CHICKEN AND VEGGIES
Heat vegetable oil in a pan. Sauté the garlic until it goes light golden.
Crack 1 egg and mix well to scramble it. Add the sliced chicken and Chinese Broccoli. Stir-fry for about 3 minutes.
ADD NOODLES AND SEASONING SAUCE
Stir in the noodles and seasoning sauce.
Stir fry until cooked through and serve immediately.
