Thinly sliced steak served over a bed of healthy rice noodles with an aromatic, zesty salad dressing and colourful fresh veggies.
Brighten up your week with a spicy and fragrant salad!
|Pad Thai rice noodles||170g|
|Cherry tomatoes (quartered)||6 pieces|
|Cucumber (julienned)||1 piece|
|Wok oil with red chillies||2 tbsp|
|Fish sauce||5 tsp|
|Coconut sugar||1 tsp|
Cook the rice noodles
Boil the rice noodles for about 5 minutes until they’re soft. Drain the noodles and then rinse them thoroughly with cold water, this will prevent them from cooking further and becoming too soft to use.
Marinade & stir-fry sirloin steak
Marinade the sirloin steak with “Wok oil” red chillies oil and Thai spices. Stir-fry the sirloin steak until medium-rare. Once cooked, slice the beef into thin strips and set aside to cool.
Prepare the dressing
Combine the fish sauce, lime juice and sugar in a bowl and mix together well.
Make the salad
Put the rice noodles in a salad bowl, then add onion, cherry tomatoes, cucumber, mint, coriander and sliced beef. Add the dressing and mix well before serving.
