Heat oil in a pan over medium heat, add minced garlic.
Stir until golden brown.
Stir-fry the prawns
Add prawns, stir occasionally until nearly cooked.
Add diced carrot and minced shallot, stir until carrot is cooked through.
Add the rice
Add cooked rice, pinch of salt, 1 tsp sugar, pinch of white pepper,
1 tsp fish sauce, 1 tbsp oyster sauce and pineapple chunks.
Add spring onions and stir until all ingredients are well mixed (about 2-3 minutes).
Plate your dish
Top with fried cashew nuts and dried raisins.
Garnish with coriander and serve with lime wedges.
