Ingredients
  • 70 g Green curry paste
  • 400 ml Coconut milk
  • 250 g Chicken breast
  • 100 g Eggplant
  • 60 g Baby corn
  • 1 bunch Basil

    Stir-fry the curry paste

    Heat 1 tbsp. vegetable oil in a sauce pan until very hot.
    Add green curry paste.
    Stir-fry then add 1 tbsp coconut milk.

    Cook the chicken

    Add diced chicken breast.
    Stir-fry to coat the meat with the paste.

    Add the coconut milk

    Add 400ml of coconut milk and 100ml water.
    Bring to the boil.

    Add the vegetables

    Add diced eggplants, baby corn, and cherry tomatoes.

    Add the seasoning

    Add 1 tsp salt and 1 tbsp sugar.
    Simmer until cooked through.

    Plate your dish

    Garnish with basil.
    Serve hot with steamed white rice.
